Fiesta Rice with Chicken and Grilled Corn

Another great instant meal for the trail!
Heart, delicious and very modifiable. You can easily add some heat by changing your ingredients or adding hot sauce on the trail. Serve with a side of toast or tortilla and your set!

This may take a little time dehydrating ingredients, but many of them are shareable across several recipes, so you'll be making multiple meals at once!

I dehydrated the chicken and vacuum sealed it separately. I store this in the freezer. The other items are totally shelf stable for a long time. 

I had a little sourdough from another recipe, so I added some olive oil to it and grilled that up too. 
A side of tortillas or fry bread would be great too!

I added water, stirred and let it rehydrate for about 15 minutes inside the insulated "cooker". It's not mandatory, but does help keep things warm while it's cooking.

After 15 minutes of patiently waiting, we enjoyed a hearty, delicious meal on the trail!

At home:
1/2 cup instant brown rice
1/2 cup dehydrated chopped chicken
1/2 cup dehydrated grilled corn
1/4 cup dehydrated chopped red bell pepper
1/2 cup dehydrated black beans
1/3 cup dehydrated chopped tomatoes
1/4 tsp dried minced jalapeno
1 1/2 Tablespoon dehydrated chopped onion
1-1/2 teaspoons sodium free chicken bouillon
1-1/2 teaspoons chili powder
1/2 tsp cumin
1/2 tsp dried oregano
1 tsp dehydrated chopped cilantro
1/2 teaspoon garlic powder
1/4 teaspoon ground black pepper
1/2 teaspoon salt

On the trail:
2 cups boiling water

Assemble all at home ingredients into a quart or gallon freezer Ziploc bag. I usually package the chicken separate as I store that in the freezer after dehydrating.

On the trail: Boil 2 cups of water. Pour into bag. Stir and allow to sit for about 15 minutes, stirring half way through and turning the bag upside down. This will help to rehydrate those veggies that floated to the top.

After 15 minutes, stir and serve!
